Today: Terre de Mistral Cotes du Rhone
2005
The Rhone valley makes some incredible and very
expensive wines but they also make Cotes du Rhone which
is typically a wine to drink within 4 or so years of the vintage.
Blended from Grenache, Syrah, and Carignane grapes, a good
Cotes du Rhone is an inexpensive and tasty introduction to
food-friendly red wine. Cotes du Rhone has been many people.s
.starter. wine because it is usually low in tannin and acidity but has
the quality of accentuating almost any good food.

Cotes du Rhones have just the right amount of flavor, fruit, and piquancy.
The Terre de Mistral is a blend of Grenache, Syrah, Carignane, Cinsault,
and Counoise. It has medium body with aromas of red currants, cherries,
and maybe a little raspberry. The flavors follow the aromas nicely and
the wine finishes with weight and presence. This is the wine for 85% of
your meals at home because it pairs well with so many of the foods we
serve on a daily basis. Our favorite accompaniments include
barbecue (chicken, beef, or pork), roast vegetables
like ratatouille, pizza, or pasta dishes. Try the Terre

Tomorrow: One of the great
luxuries of life is a well-stocked wine
cellar. With some planning and patience,
you can begin building a backlog of wines
which will taste better and complement
food better with a little aging. When
we think of wines to age, the first wine
we come to is Bordeaux. Classically a
blend of Merlot and Cabernet Sauvignon
in varying proportions, these wines
demand a few years to show at their best,
and the better the pedigree of the wine
and the better the year which produced
the wine, the more age is needed. The
payoff is when you open that bottle and
it has progressed to a better state, and it
is delicious and works perfectly with the
food you serve.

Chateau Haut Beyzac Haut Medoc
2003 Prices on imported wines have
increased dramatically. That.s one of the
reasons we were so excited to find this
wine. The Haut Medoc lies just back
toward the Atlantic from the great wine
growing regions of Pauillac, St. Julien,
and St. Estephe, whose wines now sell for
from $35-$100 a bottle on average. Grape
cultivation and production methods in the
Haut Medoc are the same as those areas.
The soil is slightly different and the land
prices are cheaper, but a quality producer
can make a wine very close to one of the
famous .classified growths. and sell it at
a sane price. The folks who make Haut
Beyzac are quality producers, and 2003
was one of the all-time great vintage years
in this region. This wine has saturated
aromas and pure flavors of black cherry,
ripe plum, and mulberry. It is great now, and
will continue to develop for 4-5 more years. If
you want to start a wine cellar, this would be a
perfect wine to begin with, and at a practically
perfect price. The Haut Beyzac Haut Medoc is
just $11.99 a bottle ($143.88 a case on the
Presell). The price for the 2005 vintage (the
current great vintage year) of this wine is
$19.49, but we were able swing a .sweet.
deal on the '03 vintage.

Italy's Great Value Wine: Pinot Grigio
Italian Pinot Grigio used to be a .no
brainer.. You didn.t have to think about
it, just reach out on any wine shop
shelf and for under $10 you could have a
delightful dry, crisp white wine with good
acidity and structure that was excellent
with any white wine food. Then came the
.California. style of winemaking. The
producers started to leave the grapes
on the vine longer to get ripeness. They
started soaking the skins with the juice
to pick up body and flavor. They cold
fermented it to squeeze the .nth. degree
of freshness out of it. And we stopped
liking it. Maybe they have begun to see
the error of their ways, though, because
this Pinot Grigio from Bel Vento (Beautiful
Wind) has most of the things we want
from a Pinot Grigio and none of those
things we don.t want. It is light, crisp,
and dry, but not fruity. It is
a no-brainer!--pick up a glass,
drink it, don.t think about it....
repeat as necessary. Try the

Varietal White and Red
Wines from Chile's Quality Producers
With prices on anything from
Europe at all-time highs, we
set our sights to the south of
us and looked to our friends in
Chile and Argentina for good
values in the wine world. We
immediately saw two great
opportunities. For white wines, we have
locked in a label called Kono Baru and
will offer a mixed case from them. For
reds, one of our favorite producers is Viu
Manent. They have been consistently
great with everything they do.

Viu Manent Varietal Red Wines
Cabernet Sauvignon Many red wine
lovers list Cabernet as their favorite red.
The grape is smallish with a thick skin and
large, fairly loose bunches which go on to
produce a wine with structure, tannin,
and flavor. This Cabernet has aromas
of plums and dark cherries followed
by flavors of ripe fruit and dense, ripe,
saturated jammy berries. The jammy
flavors of the wine carry right through to
the finish and the wine hangs on the palate
with concentration, usually the mark of a
well-made wine. We enjoy this wine with
grilled meats and blue cheeses.

Viu Manent.s Carmenere has always
been a favorite of ours. The grape is
pleasing to those who like a smoother
wine than Cabernet but more flavor and
complexity than Merlot. As Goldilocks
would say "this one is just right". Unique
to Chile, Carmenere has burst upon
the wine scene and now has become as
popular in our store as Pinot Noir. We
enjoy this wine with Lasagne, grilled
sausages, and beef ragout.

Malbec We generally associate Malbec with
Argentina, but the grape grows equally as
well in Chile. Typically made in a jammy ripe
stlyle, Malbec is another grape that makes a nice
change from Cabernet or Pinot Noir. Viu
Manent.s Malbec, while not as intense as some
Argentine Malbecs, has plenty of what we like
in a red wine: balance, flavor, low tannin, and
an enjoyable, sippable quality. Enjoy it with
food or without; the spicier the food, the

1/2 Price on Chilean White Wines from Kono
Baru (Supplies Are Limited First come-first served.)
Kono Baru Chardonnay When you see
the place-name Casablanca on a bottle of
Chilean white wine, chances are it will be
a good one. The best growing regions now
for white grapes in Chile are Leyda valley
and Casablanca. This Chardonnay has nice,
medium-to-full body to stand up to any food you
want to pair it with. It also has the quality we
love of being powerful in flavor without being
clumsy or too high in alcohol. Showing no
oak nuances, it seeks instead to wow you with
the fruit, and it succeeds. Perfect with light fish like
flounder or cod simply sauced, it is also great
with chicken dishes.

Kono Baru Sauvignon Blanc Typically
a bit lighter and slightly more acidic
than Chardonnay, Sauvignon Blanc has
become a fast favorite of ours. As a food
wine, it is unequalled. When the grapes
get ripe, the wines achieve a melon,
fresh hay aroma. The body of the wine is rarely
more than medium, and the flavors are balanced
with a hint of fruit at the beginning and a
lovely dry finish. We enjoy Sauvignon Blanc
with shellfish, smoked Salmon, light pasta
dishes, and prosciutto ham. Enjoy a mixed case
of the Kono Baru wines, 1/2 Chardonnay and 1/2
Sauvignon Blanc for just $6.50 a bottle ($78.00 a

Asheville's Sister City is Saumur, France
Saumur is in the Loire Valley in the
heart of wine country in France. When
Hunt visited the town of Saumur last
year with a delegation of folks from the
Asheville Rotary Club, naturally he
looked at several wineries and wine
production facilities (a real busman's
holiday.) One of his favorites was
the ultra-modern Cave de Saumur
which produces a red and white wine.
When he got back to the States, he
sought out all the wines from the
Cave de Saumur. We are pleased to
be able to offer their wines on this
Presell.

The Saumur Blanc, Reserve
des Vignerons, is a dry Chenin
Blanc that takes advantage of all the
modern technology to express the
heart and soul of this part of the Loire
valley. Here the soil is underlaid with
limestone and chalk. The minerals in
the soil and the growing conditions
make it special for growing white
grapes, and the Cave de Saumur uses them
to make a wine which has been a real hit
for us over the past several years. Light
aromas of apple blossom are followed by
clean, crisp Granny Smith apple flavors
and a thoroughly dry finish. If you enjoy
fish on a regular basis, this is one of the
wines you should have in your cellar to
serve with fish dishes. We also enjoy this
wine with chicken dishes and creamy
white cheeses like Havarti. Try the Saumur
Blanc for just $7.99 a bottle ($95.88 a case)

The same cooperative makes a Saumur
Rouge, Reserve des Vignerons, from the
Cabernet Franc grape. This grape is a
relative of the Cabernet Sauvignon, but
rather than producing heavy, tannic,
acidic wines the Cab Franc grape makes
a delightful, lighter, very flavorful wine
which is also a great accompaniment to
food. The Cave de Saumur received very
high ratings for this wine:

.Very pure and elegant, showing purple flower and
blue and black fruit notes, with a long, finely tuned,
minerally finish. Deceptively concentrated.. 90
points from the Wine Spectator.

We enjoy the red Saumur with a wide
variety of foods, from grilled sausages
and savory meats to spicy Thai and Latin
